You can use any of the Novation SL MKII series controllers to do stuff like this. I have the 25 SL MKII and it works great with iPad apps. 23 knobs and sliders that are assignable to control whatever you wish. Need more? You can have multiple pages of assignments, so every function you want to control can have a home.

Yea, I can't even count how many knobs and controls I have on my MPK61, but I know I have exactly 0 wood end cheeks!
I don't envy the device as much as the patience and craftsmanship. Amazing.
